Guest guest Posted March 9, 2007 Report Share Posted March 9, 2007 Warm Mushroom Pilaf 1 1/2 cups basmati rice, rinsed (see note) 2/3 cup slivered almonds 2 tablespoons (8 tsp) olive oil 6 green onions, thinly sliced 300 g (10 1/2) button mushrooms, sliced 3/4 cup raisins grated rind and juice of 1 orange 1/2 cup fresh, flat-leaf parsley leaves, chopped 1. Cook rice following the absorption method directions on the packet. Rinse in cold water. Drain. 2. Heat a large, non-stick frying pan over medium-high heat. Cook almonds, stirring, for 4 minutes or until toasted. 3. Add oil, onions and mushrooms to frying pan. Cook over medium-high heat, stirring, for 3 minutes or until tender. Add raisins, orange rind and juice. Cook for a further 30 seconds. 4. Add rice and almonds. Toss over low heat until combined. Stir in parsley. Season with pepper. Serve. NOTE: Basmati rice is an aromatic, white, long-grain rice available from your supermarket. It is great in salads because the grains do not stick together. Also great served with curries.
