Garlic Mushrooms on Toast

 

 

20 g (3/4 oz) vegan margarine

1 tablespoon (4 tsp) olive oil

400 g (7 oz) cup mushrooms, stems trimmed, thickly sliced

2 garlic cloves, crushed

1/4 cup vegan sour cream

1 tablespoon (4 tsp) water

1 tablespoon (4 tsp) chopped fresh chives

4 thick slices GF white bread,toasted

 

 

1. Heat margarine and oil in a large non-stick frying pan over high

heat until sizzling. Add mushrooms. Cook, stirring, for 5 minutes or

until tender. Add garlic. Cook for 1 minute or until aromatic.

 

2. Add vegan sour cream and water. Stir until heated through. Sprinkle

with chives. Serve on hot buttered toast.

 

 

Serves 2.
