Guest guest Posted March 8, 2007 Report Share Posted March 8, 2007 Winter Green Vegetables 20 g (3/4 oz) vegan margarine 1 tablespoon (4 tsp) oil 3 baby fennel, trimmed, washed and thinly sliced 200 g (7 oz) broccolini (-OR- Broccoli), trimmed and washed 200 g (7 oz) snow peas, trimmed and washed 200 g (7 oz) green beans, trimmed and washed 2 tablespoons (8 tsp) water salt and pepper, to taste 1. Heat margarine and oil in a large saucepan over high heat until hot. 2. Add fennel and cook, stirring often, for 2 minutes. Add broccolini, snow peas and beans. Toss until well combined. Add water and cover. 3. Cook, stirring every minute, for 2 to 3 minutes, or until vegetables are just tender. Season with salt and pepper and serve immediately. Serves 8.
