Guest guest Posted March 8, 2007 Report Share Posted March 8, 2007 Microwave Vegetable Pilaf 1 kumara (orange sweet potato), peeled 1 carrot, peeled 2 zucchini 2 tablespoons (8 tsp) olive oil 1 brown (yellow) onion, finely chopped 1 garlic clove, crushed 1 1/2 cups basmati rice, rinsed 2 cups chicken-style stock 1 corn cob, kernels removed 2 tablespoons (8 tsp) chopped fresh flat-leaf parsley pepper, to taste 1. Cut kumara, carrot and zucehini into 1 cm (3/8 " ) pieces. 2. Place oil, onion and garlic into a 3 litre/quart microwave-safe bowl or rice cooker. Cook, uncovered, for 2 to 3 minutes on HIGH (100%) power, stirring every minute, or until soft. Stir in rice. Cook for 1 minute on HIGH (100%) power. 3. Stir in stock, kumara and carrots. Cover with a lid or double layer of plastic wrap. Cook for 5 minutes on HIGH (100%) power, followed by 7 minutes on MEDIUM (50%) power. Remove from microwave. 4. Remove lid or plastic wrap, working as quickly as possible to prevent too much steam from escaping. Stir in zucchini and corn. Cover and cook for a further 5 minutes on MEDIUM (50%) power.
