Guest guest Posted March 7, 2007 Report Share Posted March 7, 2007 Crispy Potato and Eggplant Pizza 1 quantity GF pizza dough -OR- one 25 cm (10 " ) prepared GF pizza base 1/2 cup baba ghanoush dip (see Condiments folder) 2 small desiree potatoes, thinly sliced 4 tsp fresh rosemary leaves extra-virgin olive oil salt and pepper 1. Preheat oven to 220 C (428 F). Place pizza dough or prepared pizza base onto a lightly greased baking tray. 2. Spread baba ghanoush over the pizza base and top with potato slices, slightly overlapping. Sprinkle with rosemary and season with salt and pepper. 3. Drizzle with olive oil. Bake for 15 minutes or until base is golden and potatoes are tender. Serve immediately. NOTE: If desired, hommus (chickpea dip) may be used in place od baba ghanoush. Serves 2.
