Guest guest Posted March 7, 2007 Report Share Posted March 7, 2007 Tomato, Zucchini and Tofu Skewers 300 g (10 1/2 oz) firm tofu, cut into cubes 2 zucchinis, sliced thinly lengthwise 24 cherry tomatoes Dressing: 2 tablespoons (8 tsp) oil 2 tablespoons (8 tsp) lime juice 4 tsp brown sugar 4 tsp chopped basil 1. Wrap tofu cubes in zucchini slices. Thread tomatoes and tofu cubes alternately onto 8 skewers. 2. Spray a frying pan or chargrill with olive oil. Cook skewers over medium heat for 2 minutes each side or until browned. 3. Prepare dressing Whisk ingredients together in a small jug. Drizzle over skewers and serve.
