Vegetarian Lasagne

 

 

3 large potatoes

3 large onions

3 zucchinis

herbs and spices

grated vegan cheese to taste

300 g (10 1/2 oz) pumpkin

1 can crushed tomatoes -OR- pasta sauce

1 packet (200g) (7 oz) ORGRAN Rice & Corn Mini LASAGNE sheets.

 

 

Cook lasagne according to directions on pack. Thinly slice all

vegetables, slicing the zucchini length ways. Then in a lasagne tray,

layer half of the sliced potato, pumpkin, onion, zucchini, pasta

sauce, lasagne sheets and cheese. Repeat layering of vegetables and

finish off with a layer of lasagne sheets, followed by crushed

tomatoes or pasta sauce and cheese.

 

Bake covered for 20 minutes, thenbake uncovered for 10 minutes.

Leave standing for 5 minutes.

 

 

Serves 4.
