Guest guest Posted March 6, 2007 Report Share Posted March 6, 2007 Roast Vegetables 2 tablespoons (8 tsp) oil 6 potatoes, peeled and halved 1/2 jap -OR- other pumpkin, seeds removed, peeled and chopped 3 onions, peeled and quartered 1. Place oil in a large baking pan. Add potatoes, pumpkin and onion. Stir to coat vegetables in oil. 2 Bake for 40 to 45 minutes in moderate oven (180 C)(350 F) or until vegetables are cooked and golden. NOTE: If liked, parboil vegetables for 5 minutes. Drain well.
