Tomato and Basil Bruschetta

 

 

1 stick GF Italian-style bread, sliced

olive oil

4 tomatoes, finely chopped

1 small red onion, finely chopped

1/4 cup chopped fresh basil

1 clove garlic, crushed

freshly ground black pepper

4 tsp balsamic vinegar

 

 

1. Place bread on a lightly greased baking tray. Brush with oil. Bake

in a hot oven (200 C)(390 F) for 10 minutes or until beginning to

brown. Alternatively, grill under a hot griller.

 

2. Combine tomatoes, onion, basil, garlic and pepper together in a

bowl. Drizzle with a little extra oil and balsamic vinegar.

Spoon onto bread bases.

 

 

NOTE: Bruschetta is even more delicious if the bases are warm.

 

 

Serves 4 to 6.
