Guest guest Posted March 6, 2007 Report Share Posted March 6, 2007 Curried Rice and Bok Choy Soup 1 onion, sliced 1 tablespoon (4 tsp) oil 2 teaspoons curry powder 1 carrot, chopped 1/4 cup rice 4 cups chicken-style -OR- vegetable stock 1 bunch bok choy, trimmed and leaves separated 1. Place onion, oil and curry powder in a large microwave-safe dish. Cover with a lid or plastic wrap. Microwave on HIGH (100%) power for 3 minutes. 2. Add carrot and rice, mixing well to coat grains. Stir in stock. 3. Microwave, covered, on HIGH (100%) power for 15 minutes or until rice is cooked and carrot is tender. 4. Stir in bok choy. Allow to stand, covered, for 3 minutes. Serve immediately.
