Guest guest Posted March 6, 2007 Report Share Posted March 6, 2007 Sweet Potato Soup 1 tablespoon (4 tsp) oil 2 onion, chopped 2 cloves garlic, crushed 4 sweet potatoes (kumera), peeled and roughly chopped 6 cups water seasonings to taste 4 tsp brown sugar chopped parsley 1. Heat oil in a large saucepan. Saute onion and garlic until onion is tender. 2. Add sweet potato. Cook, stirring, for 1 minute. Pour water over mixture. Stir in seasonings. 3. Bring to the boil. Simmer, covered, until sweet potatoes are very tender. 4. Reserving a few chunks, puree remaining mixture using a food processor or hand blender. Blend in sugar.
