Brussel Sprouts With Chestnut Butter

55 g (2 oz) vegan margarine, softened

1 garlic clove, crushed

1 lime, zest of

1/4 teaspoon nutmeg

55 g (2 oz) ready prepared chestnuts

650 g (23 oz) Brussels sprouts, trimmed

 

 

1. Mix margarine, garlic, zest and nutmeg and beat together.

 

2. Chop chestnuts and add to butter. Place on cling film and make into

a sausage shape. Chill until needed.

 

3. Cook sprouts for 8 - 10 mins in boiling salted water until tender.

 

4. Drain and serve topped with the butter.

 

 

Serves 6.
