Guest guest Posted March 3, 2007 Report Share Posted March 3, 2007 Red and White Cabbage Salad 2 cups finely shredded red cabbage 2 cups finely shredded green cabbage 2 bananas 4 tsp lemon juice 1 cup coconut, toasted (see Note) 1/4 cup vegan mayonnaise salt and freshly ground black pepper to taste 1. Combine red and green cabbage in serving bowl. 2. Slice bananas (see Note). Brush with lemon juice to prevent discolouration. Toss through cabbage with coconut. 3. Stir in mayonnaise and seasonings. Mix well. Serve as a meal accompaniment. NOTE: To toast coconut, toss in a dry frying pan over a medium heat until golden.
