Guest guest Posted March 3, 2007 Report Share Posted March 3, 2007 Mixed Mushrooms on Grilled Turkish Bread 2 tablespoons (8 tsp) olive oil 30 g (1 oz) vegan margarine 2 cloves garlic, crushed 500 g (17 1/2 oz) mixed mushrooms, sliced (button, field, shiitake, oyster, etc) 2 tablespoons (8 tsp) chopped fresh parsley 4 tsp balsamic vinegar 2 teaspoons chopped fresh thyme salt and freshly ground black pepper to taste 8 wedges GF turkish bread (-OR- similar GF bread) 2 tablespoons (8 tsp) olive oil extra parsley 1. Heat oil and margarine in a heavy-based frying pan over a medium heat. Saute garlic for 1 minute. 2. Stir in mushrooms. Cook, stirring, for 5 minutes. Remove from heat. Blend in parsley, vinegar, thyme and seasonings. 3. Brush both sides of bread with oil. Grill or barbecue on a hot plate for 1 to 2 minutes each side. 4. Arrange bread on serving plates.
