Vegetable Flan

Source: Orgran Everyday Health, recipe by Sue Belfitt.

 

 

Pastry

 

 

2 cups Orgran Pizza and Pastry mix

(-OR- try dry ingredients from other pastry recipe or mix)

1 medium sized sweet potato, cooked and mashed

3 tbsp (1/4 cup) olive oil

1/4 cup sesame seeds

seasoning to taste

 

 

Place the pizza mix in a mixing bowl and rub in the olive oil. Add

the sesame seeds and seasoning if used. Now add the sweet potato and

if too dry add enough water until you are able to pull together a

dough. Roll out on a floured (GF flour) board to 8mm (1/3 inch) thick

and place in a 25 cm (10 inch) flan tin. Trim your edges and then cook

this in a preheated 180 C (350 C) oven for 15 minutes. Remove from the

oven and set aside while you prepare the filling.

 

 

Filling

 

 

2 onions, diced

2 medium carrots

4 medium sized potatoes

1 cup peas

 

 

Saute the onion in a little stock. Add the diced carrot and potato and

simmer until the vegetables are almost cooked and then add the peas.

Cook for a couple minutes more then remove from the heat. Allow to

cool then place cooked vegetables in the flan base.

 

 

White Sauce

 

 

1/2 cup Orgran Plain Flour (-OR- other GF flour mix)

2 tbsp (8 tsp) olive oil

2 to 2 1/2 cups soy -OR- rice milk

2 to 4 tsp gomasio (sesame salt)

nutritional yeast

 

 

Place the oil in a small saucepan on low heat then stir through the

flour. Then add 2 cups of the soy milk slowly, stirring all the time.

Allow to boil then simmer on low till thickened, you will need to add

more soy milk if the sauce is too thick. Now remove from heat. Stir in

the gomasio. Pour this over the vegetables and sprinkle with

nutritional yeast. Place in the oven for 10 minutes and then serve hot

with a bean or green salad.

Hi all,

 

I made this a few nights ago. It was quite nice but we all agreed that

the veggies needed a little more flavour. I also had a little pastry

left over so I made some small individual flans for my son for his

school lunches. They were actually better cold. The sauce set nice and

solid making them really portable. I have made this recipe again (all

individual flans) today as my son is going on a school camp and needs

something for his luches while there. I made a few changes to the recipe.

 

To the pastry I added a little onion powder, garlic powder, a pinch of

salt and about a tablespoon of nutritional yeast. I cooked the pastry

for about 20 minutes instead of the 15 minutes in the recipe.

 

For the veggies I halved the amount of potatoes, added 1 capsicum

(bell pepper) and a can of corn kernels. I also added a little

chicken-style bouillon powder to the cooking water.

 

Both times I didn't use gomasia, instead using nutritional yeast and

some chicken-style bouillon powder to flavour the sauce.

 

I baked the finished flans for 20 minutes. These seem to have much

more flavour than the first time.

 

I think this recipe can be made with any veggies that you fancy, as

long as they aren't too mushy.
