Artichoke & Bean Salad with Garlic Thyme Croutons

 

 

2 cups mixed salad greens

4 marinated artichokes, quartered

1 red capsicum (bell pepper), chargrilled and sliced

420 g (15 oz) can four bean mix, drained

1 GF ciabatta bread roll, sliced

1 garlic clove

1 tsp dried thyme

 

 

1. Place salad greens on a serving plate and arrange artichokes,

capsicum and four bean mix on top.

 

2. Toast bread roll slices and spray one side with olive oil, rub with

garlic and srinkle with thyme.

 

3. Place croutons amongst salad just before serving.

 

 

Serves 4.
