While cooling, saute sliced garlic cloves and chopped onions in olive or hemp oil. Peel beets and shred. Squeeze on the juice of a fresh lemon. Add basil, Celtic sea salt, olive oil, sauted garlic/onions, and some sliced black olives. I put some in a jar and ate it the next day. It was delicious!
