Guest guest Posted February 13, 2007 Report Share Posted February 13, 2007 FRENCH TOAST Source: 3ABN(adapted to gluten free) ½ cup cashews 2 cups water ½ cup date pieces ½ cup pineapple juice concentrate ¾ cup flour of choice(millet, garbanzo, etc) 1 tablespoon vanilla 1/8 teaspoon coriander Blend all ingredients until smooth. Dip slices of whole grain bread into batter, being sure to scrape off excess batter. Cook in a non-stick skillet over medium heat until brown on each side. **I made some spread from the leftover batter. I added some sweetener and water and heat it up, then chill. It was good!
