I tried the recipe again using milletmeal instead of bread crumbs and I added an extra 1/2 c. nut milk. Next time I would increase the amount of liquid another 1/2 c. as my family said it was much drier than the first loaf my girls made. My family used to really enjoy gluten steaks, but now they tell me they would rather have a nutloaf! I would like to try the recipe using uncooked rice, millet, quinoa etc. and get back to you on the results. I've never seen Ener G Tapioca bread, but if it has a nice texture I couldn't see why it wouldn't work for this recipe. I'd give it a try! In post #10865 Toshiko wrote that she froze her loaf. Would one thaw it before reheating it? I think I would cut down on the liquid next time. I had wanted to try quinoa flakes, but wasn't able to find them. I like the taste of this Sunflower Nut loaf, but about ready to give up on it for good. Also, do you cover with foil for the first 45 minutes of baking? I think I would skip that next time too. I think it keeps it from turning too brown? I tried it with brown rice flakes also and it was very good, but they are also very expensive. I don't have any quinoa flakes to try it with.
