Stuffed Shells

3 cups tofu, mashed

1 to 2 cups Cashew Mayonnaise

2 tablespoons basil

2 tablespoons oregano

2 tablespoons onion powder

1 tablespoon garlic powder

1 tablespoon salt

1-12 ounce package jumbo shells(gluten free if necessary)

4 cups spaghetti sauce

 

Cook pasta according to package directions. Mash tofu and add seasonings and

enough mayonnaise to moisten. Put just enough spaghetti sauce in the baking

dish to cover the bottom. Stuff pasta with filling, and place in dish. Cover

generously with sauce and bake covered at 350° for one hour.

 

 

Cashew Mayonnaise

 

1 ¼ cups boiling water

¾ cup raw cashews

1 tablespoon honey(or sweetener of choice)

1 teaspoon salt

½ teaspoon onion powder

¼ cup lemon juice

 

Blend cashews until very smooth with just enough water to turn the blender.

Add the rest of the water and the remaining ingredients, except the lemon

juice, and blend again. Add lemon juice and blend briefly. Thicken on stove

over medium heat. Chill.
