I know lots of people like Tinkyada and it seems to be available in about every store. I haven't tried the rinsing with cold water -- maybe that's the trick. Mine doesn't stick together but it seems to go straight from crunchy to mushy. I tried Bionaturae and I think it is wonderful. It actually ends up al dente. I posted my experience on a celiac board and someone else tried it and agreed with me. The other people told me that Tinkyada was great, what was my problem LOL So for straight pasta recipes, I'm going with Bionaturae. I wish my Whole Foods had more than one shape available. I guess I will need to scope out another couple health food stores in my area and see if their selection is different, or order online. I've tried corn pasta elbows (De Boles) even before I was gluten-free and liked them. But then I've tried another corn pasta shape of theirs and it was mush. I just bought some quinoa pasta. We'll see ... DianeR
