Guest guest Posted February 2, 2007 Report Share Posted February 2, 2007 Shalom Y'all! YUMMMMM!! I made some organic cashew and apricot " milk " today in my Vita-Mix, the same way I do Almond milk. This milk is mild, creamy and absolutely delicious! I am planning on using it later to make ice " cream " with. We'll see how that goes! CASHEW-APRICOT " MILK " ©2007 Vickilynn Haycraft 1 cup organic raw or dry-roasted cashews - whole or large pieces, shelled 8 organic, unsulphured dried pitted apricots 6 cups pure, filtered water 1 Tablespoon pure vanilla extract 1 pinch Kosher salt The night before, place the cashews, apricots and water into the VitaMix container, place the lid on and store in the refrigerator. When ready to make " milk " , place the VitaMix container onto the base and process on HIGH for approximately 2 minutes. Add vanilla and salt and stir to mix. Taste and adjust to taste preferences.
