I have many allergies/sensitivities including wheat/gluten, soy, dairy, caffeine, sugar and probably some other things! I also have IBS....so that complicates things even more. I would love to know how you keep variety in your meals! Sometimes I get a little frustrated because I feel so limited, although I have found some delicious vegetable recipes out there. Let's swap experiences and please let me know if you know of any good recipe sources or books for people with our sensitivities. Thanks!! Guest guest Posted January 31, 2007 Report Share Posted January 31, 2007 No I'm deadly allergic to caffiene i've been off caffiene since 1972,I almost died my senior year in high school and it was caffiene that caused it. I really know if i get caffiene accidently, cause im so sick I cant breathe right. I've stopped breathing lots of times cause of caffiene, so I read labels adn stuff faithfully for all my allergies. , the other food allergies affect me the same way. especially the wheat, and gluten etc. I get sick in my stomach and vomit immmedialtey have breathing problems etc. I dont take meds at all. there are very few that I can use. the doctors have to be careful with me. I'm luck that my daughter is a pharmicist tech that if the doctor gives me a prescription she triple checks it for me. Guest guest Posted February 1, 2007 Report Share Posted February 1, 2007 HI SHARON, Here is a list of all my FOOD ALLERGIES: WHEAT,OATS,BARLEY,RYE,BUCKWHEAT, CARROTS,ONIONS, BLACK PEPPER,CAFFIENE,ARTIFICIAL SWEETNERS, and all DAIRY PRODUCTS. and most MEDICATIONS cause they are all derived from what im allergic to. I also have HYPOTHRYOIDISM and most of the time I'm HPOGLYCEMIC( LOW BLOODSUGAR)I've been craving sugar alot lately that bothers me wheni get urges like that. I eat pretty good. Even though I dont like to eat. My family always gets upset cause I dont eat much. It took me a while to get used to this way of eating but I went on this diet in Feb 1986, so this is my anniversary month of being on this diet. the dairy free was in Oct2004.I've always ahd a problem with dairy but never wanted to give it up wellI finally did cause I got so sick I wanted to die. so I gave it up and very few stomach problems now. there are so many foods out there to eat. I eat CORN TORTILLAS alot.I use them for bread etc. I also eat TAPICOA BREAD from ENER-G FOODs it is my favorite bread.I toast it and fix my sandwich like i would if I used regular bread.I " ve also used a sanwich maker for my bread, it makes good pocket sandwiches. I also eat pretzels from ENERG FODS adn another company(wyklies i think) I buy pizza crust from KINNICKS(spelling) to make pizza when everyone else is having a pizza. I use rice sticks as spaghetti, I use corn or rice or potato macaroni and it is great. I have all kinds of pastas to fix. I keep lots of differnt flours at home all stored in TUPPERWARE so when i get in the mood to bake I have them all on hand.I've had to move into the laundryrooom to store all my flours but it is worth it.we ahve 2 refrigerstors one is in the laundryroom for my foods. I still cook for ther et of the family there foods. it is hard but i do it. wheneveryone is home.alot of times I cook my foods if they arent watching and they dont notice the differnce. But if they are all watching then I cook there food. right now it is just my husband and I and I cook one meal not two saparate meals. Yesterday I fix a pot of pinto beans with potatoes and peppers in it and i fixed jalapeno cornbread .My husband was thrilled. I never plan in advance cause something usually happens and i ahve to change it anyways. so each day I see whatim in the mood for and then cook it. . It is just me during the day and soI jsut pick a little here and there. not much food cause i hate eating.but i love to cook. I'll get something out of freezer about 2P.M for supper, and start cooking about 6P.M I dontfeel limited on what I can eat.when my whole family is here visiitng or I go to relatives homes theya re always appoliging to me cause they cant cook for me.I always take my own food with me when i visit relatives. I am allergic to wheat/gluten (so everything that contains that stuff), dairy, soy, I don't do well with sugar or artificial sweetners and I can't have caffeine. I also have hypothyroidism and adrenal exhaustion, oh and IBS (fun). I also have severe PMS. I am woking with my naturopath on all of these things.....and I feel much better when I am adhering to a very strict diet. I love to eat, and cook , so I am always looking for good recipes. I have grown accustomed to changing regular recipes as much as I can, but I am not a huge fan of using fake stuff...I like to stay with whole foods....so I don't use any of the " replacement " things out there, at least not yet. I have not explored baking yet, so I do not have flours on hand. Thankfully have a gluten free dairy free bakery in Seattle. But, it is something that I would like to dabble in - so if you know what flours work best for what puposes, that would be great to know. Also, I know there are many ways of substituting eggs (ground flax meal and water is one that I have heard of), do you have a favorite method? I also eat meat....not a ton of it, but I seem to need it, so I eat beef occasionally, chicken, and fish. I am very selective within these categories, so still limited. I love legumes, but because of IBS, I have to be careful how often I eat beans....and I seem to handle them better in the summer - more digestive fire. How did you make the jalapeno cornbread? That sounds very good. Do you use coconut milk or oil much? I've just gotten into it. I have a hard time cooking with olive oil because if it is heated too much its structure changes into a trans fat, and I don't digest fats easily. So I am trying to experiment with different oils such as coconut and peanut. And I have come to love coconut milk - although, I haven't found many uses for it just yet. I do miss eating sandwiches, but haven't found a bread suitable to make sandwiches with. I will check out the tapioca bread you mentioned below. The bakery I mentioned makes a good quinoa bread, but it is too dense to use for sandwiches. All I can do with it is toast it and eat it with almond butter, and I rarely buy it. I should probably start making use of corn tortillas more often. I think I am ok with corn. I also have rice pasta every so often.....hard though coming from an Italian family. I must admit I miss regualr pasta and wheat pasta.....but rice isn't a bad alternative...it does the trick. Well, I would love to swap recipes or continue sharing experiences because you sound to be in the most similar situation to me - and I am relieved to hear you eat meat! I am sometimes to even mention the word in this group forum. How are you treating your hypothyroidism? I am taking T3 and iodine.
