Guest guest Posted January 21, 2007 Report Share Posted January 21, 2007 Zesty Green Bean Salad 1 lb fresh green beans or haricots verts 1 Tbsp salt 1/2 red or yellow bell pepper, julienned 1/4 cup olive oil 3 Tbsp lemon juice or vinegar 2 cloves garlic, minced 1 tsp or more hot red pepper flakes 1/2 cup coarsely chopped walnuts Break off the stem ends of the beans, wash and drain. Bring to a boil 4 cups water and salt. Add beans, cook 8-10 minutes but retain crispness. Drain and add bell pepper. While beans are still hot, combine oil, lemon juice/vinegar, garlic, pepper flakes and walnuts, pour over beans, toss well and serve at room temperature.
