I miss seitan too. It's one of most popular recipes in my cookbook and one

of my family's favorites. But now I can't eat it. My husband keeps asking,

" Can't you come up with a GF gluten? " So I tell him that's an oxymoron!

But I keep thinking about experimenting!

Replying to my own message. Tsk, tsk...

 

The one downside to protein powders is they do not

make a meal, whereas with gluten, I was able to make

the most convincing meat substitutes (seitan). :(
