Kasma Burgers

 

 

1 cup buckwheat

1 cup cooked lima beans

1 large onion, diced

3 garlic cloves, crushed

1 fresh chilli, finely sliced

1 cup sliced small button mushrooms

8 tsp tomato paste

1/2 cup walnuts, roasted & coarsely chopped

1 cup Orgran All-Purpose Crumbs (-OR- GF dry breadcrumbs)

2 1/4 cups water

4 tsp olive oil

 

 

1. Lightly roast the buckwheat in a saucepan and then add 2 1/2 cups

water. Simmer until cooked. The buckwheat will be light and fluffy

when stirred with a fork. Allow to cool.

 

2. Heat 4 tsp olive oil in a fry pan and saute the onions until soft

and then add the garlic and cook a few minutes more. Add the chilli

and mushrooms. Cook until the mushrooms are soft. Take off the heat

and allow to cool.

 

3. Place the buckwheat mixture in a food processor with the lima beans

and tomato paste. Process until thoroughly blended.

 

4. Place this mixture into a bowl and stir in the crumbs and walnuts.

Season now if desired. Mix everything together well. Leave to sit for

20 minutes.

 

5. Test your mixture by making a burger and if too soft to hold shape

add more crumbs. Allow to sit a little before proceeding.

 

6. Place the burgers on an oiled tray and brush with a little olive

oil. Bake in a moderate oiven for 20 minutes or grill for 10 minutes,

then carefully turn the burgers and grill the other side.

 

Serve with slices of freshly made GF bread and lots of salad and sprouts.
