Guest guest Posted December 31, 2006 Report Share Posted December 31, 2006 Amazing Whole Grain Waffles Source: 3ABN (adapted to gluten free) 1/4 c. cornmeal + 1/2 c. water 3 c. water 1/4 c. Country Life Soy Supreme powder 1/2 tsp. salt 2 c. rolled quinoa flakes 1/4 c. raw brazil nuts 1. Microwave cornmeal and 1/2 cup cold water until water is absorbed and cornmeal begins to thicken - approximately 1 - 2 minutes, depending on your microwave. You could also cook the mixture in a small saucepan on the stove top until it thickens. 2. Blend the cooked cornmeal with the rest of the ingredients until smooth. Pour batter into hot waffle iron and bake 8 - 10 minutes depending on your waffle iron. 3. Cool in a single layer on a wire rack. You will be amazed at how these waffles come out - light and crisp like a vanilla wafer! To crisp them up again, reheat briefly in toaster. Two cups Silk soymilk plus 1 cup water can be substituted for the 3 cups water and 1/4 cup Country Life soy milk powder. If you desire the waffles to be browned more, try adding 1 tsp. vegan syrup (maple, agave, etc.). The original recipe called for rolled oats; substitute quinoa flakes.
