Organic Olive Oil 3 medium-sized shallots, peeled and thinly sliced into discs 2 Tbsp. pareve margarine 1 Tbsp. Dijon Mustard (gf) 2 lbs. organic asparagus, rinsed and trimmed sea salt and pepper to taste Cook asparagus in a large pot of boiling water, until just tender. Remove from heat and rinse under cold water. Set aside. Heat olive oil in a large sauté pan over medium high heat. Add shallots and sauté until golden brown and crispy. Remove from heat and drain on paper towels. Add margarine to sauté pan to melt. Stir in mustard, add asparagus. Toss to coat evenly and cook for about 1 to 2 minutes. Place on serving platter.
