Guest guest Posted December 6, 2006 Report Share Posted December 6, 2006 Pea, Mint and Avocado Salad 3 avocados, sliced 100 g (3 1/2 oz) baby spinach 1 cup peas, blanched 1/2 cup torn mint leaves Dressing : 8 tsp lime juice 8 tsp extra virgin olive oil 1/2 tsp sugar freshly ground black pepper sea salt 1. Arrange avocado slices, spinach peas and mint on a platter. 2. Combine dressing ingredients. 3. Drizzle dressing over salad and toss gently to coat. Serves 6.
