I got the idea from an old magazine, and just made up my own recipe. Enjoy, Robin. Rudolph Cookies 1/4 cup powdered sugar 1/4 cup maple syrup 1 cup margarine, softened 1 cup white rice flour 2/3 cup cornstarch 1/2 tsp xanthan gum Gluten free pretzels (for the antlers) Chocolate chips (for the eyes) Soft red candies for the noses (such as Mike n' Ikes – cut in half) In mixer bowl, sift the powdered sugar, then add maple syrup and margarine. Beat on low until combined then turn mixer up to high speed and beat until light and fluffy. In a small bowl whisk together the rice flour, corn starch and xanthan gum. Add this mixture to the mixer bowl. Beat on medium low speed until combined. Drop dough, by heaping teaspoon, onto cookie sheet. Spread and flatten slightly (cookie should be about 1 ½ inches across) Place on each cookie: 2 chocolate chips for eyes (pointed side down) and 2 pretzels for antlers (press in gently). Bake in preheated 375 oven for 17-20 minutes, until edges are deep golden brown. Remove from oven and before removing cookies from baking sheet; add 1 red candy nose. Push firmly into place.
