Very Berry Fruit Parfait

2 Tbsp. agar flakes

1 1/2 c. apple juice

1 package Mori Nu Firm Silken Tofu

1 1/2 c. blanched almonds

1/4 c. honey (or vegan alternative)

1 tsp. vanilla extract

1/2 tsp. lemon zest

1 Tbsp. lemon juice

1/4 c. cooked beets

2 c. berries of choice

 

1. Sprinkle agar over 1 cup apple juice in a small saucepan. Let sit five

minutes, then bring to a boil. Reduce heat and simmer until agar dissolves,

5 - 10 minutes.

 

2. in blender or food processor, purZe blanched almonds and 1/2 c. apple

juice along with the tofu, scraping down the sides of blender or processor

and blending until smooth. Add honey, vanilla, lemon zest and agar mixture

and blend until well mixed.

 

3. Remove 2/3 of the tofu mixture and set aside. Blend 1/4 c. cooked beets

into the remaining mixture for color.

 

4. In six 6-oz. glasses, place half of the white tofu mixture. Pack glasses

in ice for 15 minutes to allow the mixture time to set. Then add a pink

layer and chill. Finish off with a white layer.

 

5. Refrigerate for 1 - 2 hours. This may be made 24 - 48 hours ahead. When

ready to serve, garnish with fresh fruit.

 

Serves 6 - 8
