Guest guest Posted December 3, 2006 Report Share Posted December 3, 2006 Sweet Potato Souffle Source: 3ABN 4 med. sweet potatoes 2 tsp. vanilla extract 2 tsp. honey (or vegan alternative) 1/4 tsp. ground coriander 1/4 c. soy or nut milk 1 Tbsp. light molasses 1/4 c. walnuts, chopped 1. Wash sweet pototoes and pierce with a fork. 2. Bake until soft and juices are appearing (350° for about an hour). 3. Cool, peel and mash sweet potatoes and add remaining ingredients. A food processor works well. 4. Pour into a casserole dish and top with chopped walnuts. 5. Bake at 350° for 30 minutes.
