Fruit " Nutty " Balls

2 cups pitted dates

1 cup raisins

1 cup dried apricots

4 cups nuts (walnuts, almonds or pecans)

4 cups shredded coconut

 

Chop or grind dried fruits through a food processor or a grinder. Place

mixture in a bowl and set aside. Then process until finely chopped. Add

nuts to the dried fruit mixture. Stir in 2 cups of coconut and mix well.

With hands, form 1 inch balls and roll them in remaining 2 cups of coconut.

Place in an air tight container and refrigerate until ready to serve.

 

Variation: Add 1 1/2 Tbsp. carob powder to mixture.

 

Yields: 60
