I just wanted to say " hello " and thank you all for the recipes that have been shared. I am very behind on emails but am enjoyuing this list the most. I am just getting my life back in order after dealing with 2 seriously ill children. My daughter, Asia, who is 9 has Celiac Disease, Pyridoxine Dependency seizure disorder, etc. Asia has been very unwell and it has been so very hard to be on a new diet. She misses her perogies (anyone have a recipe) and the only pizza shells around here have animal products in them. ( (any recipes for those?) I am so run down it isn't even funny. How do I make time to get this stuff cooked when I am in the hospital with my other daughter Sienna. (20 months and seizure disorder that has been serious lately) How do all of you do it? Sienna had a 42 minute seizure yesterday and I just feel sick. My neuro doesn't think it is wheat and believes there is NO connection between wheat and seizures. (Asia has prooved that wrong) I am so sorry for venting on all of you. I just don't know who to turn to. So many people think we should just feed our kids meat and that it would be easier on all of us if Asia follows a celiac diet with animal products in it. I just feel alone in this right now. Animal products are NOT an option for our family. Thank you for listening. I would love any kid friendly recipes if you can share any. I need to do some cooking so that when the going gets tough I can have stuff in the freezer for Asia. How about corn tortillas with beans, avacado onions peppers? tamalies? pupusas? vegatable fritters? like zuchini, corn sweet potato? veggie spring rolls I got one reciepe that would works as a side dish not sure how kid friendly but here goes: steamed rice chopped parsley raw red or white onion- chopped paparika- to taste stir together with hot rice serve with grilled light green peppers and tomato Quote Link to comment Share on other sites More sharing options...
