Guest guest Posted November 28, 2006 Report Share Posted November 28, 2006 Citrus Fruit and Grain Salad Source: Taste of Life magazine/from Food Allergy Guide 4 cups cooked whole grains (brown rice, wild rice, quinoa, or a combination) 2 navel oranges, peeled and chopped 1/2 cup minced fresh parsley 1/3 cup raisins 1/4 cup extra virgin olive oil 3 Tbsp. fresh lemon juice 1 Tbsp. balsamic vinegar 2 tsp. Dijon mustard** Salt Combine the cooked grains, oranges, parsley, and raisins in a large bowl. In a small bowl, whisk together the oil, lemon juice, balsamic vinegar,and mustard. Pour over the grain and fruit. Toss well. Season with salt to taste.
