tofu turkey roast

Hi All,

 

The marinade for the turkey roast use miso. It seems to come only in

very large quantities that I would not use. Is there anything that

can be used in it's place? What about a substitute for agar? Where do

you get chicken-like boullion powder?

However, don't use the soy sauce suggestion as the marinade already

contains soy sauce.

 

I'm not sure about a sub for agar. The agar gels it all together. I

have made other tofu turkeys without agar, but this is the most

successful and has the best texture of those I have tried.

 

You should be able to buy chicken-style bouillon powder at the

supermarket, but you can make it very easily yourself. There are

several recipes in the files. This is the one I make:

 

 

Chicken Style Bouillon Powder

 

 

8 tsp salt

1/2 cup nutritional yeast flakes

1/2 tsp turmeric

1 tsp garlic powder

3 tsp onion powder

1/2 tsp marjoram

1/2 tsp sage

3 tsp parsley

 

 

Blend in a food processor. Store in an air-tight container in the fridge.
