This recipe has allowed me to make all my favorite wheat items. Cookies, cakes, quick breads. It works in any recipe, any cook book, other than a yeast bread. The recipe below is the recipe times 5, as this is the way I buy the ingredients in bulk. My friend thinks she found it in the magazine Living Without. All Purpose Gluten Free Flour Mix (recipe times 5) 5 cup brown rice flour 6 1/4 cup rice flour 1 1/4 cup potato starch 3 1/3 cup sweet rice flour (or glutinous flour...same thing) 2 2/3 cup corn starch 3 1/3 cup tapioca starch 10 teaspoons xanthum gum (3tbs +1tsp) I hope you all enjoy it as much as I have. So you use this mix just like you would flour. If rec. calls for 2 cups of wheat flour you just use 2 cups of this mixture? I have never had a flop yet. I have stayed away from yeast breads, as these are tricky with GF flours. But the rest has turned out wonderful. This mix is cup for cup for wheat flour.
