Guest guest Posted October 3, 2006 Report Share Posted October 3, 2006 Crockpot Bean Soup 16 Navy or Great Northern Beans 7 cups water or vegetable broth 1 small onion, diced 2 cloves garlic, minced 1/2 teaspoon salt 1 pinch black pepper, optional 1 bay leaf, optional 1/2 cup carrots, sliced 1/2 cup celery, sliced 2 small potatoes, diced season to taste with vegetarian beef or chicken flavorings Rinse and soak beans over night in covered pot. Add all ingredients to crockpot and cook for 5 hours (or until done) on high, or all day on low until beans are tender. You can cook these on the stove as well until beans are tender. Options are yams, sweet potatoes, turnips, or parsnips. You could also substitute a gluten-free pasta (like brown rice spirals), but I wouldn't add pasta until near the end of the cooking process.
