Guest guest Posted October 1, 2006 Report Share Posted October 1, 2006 Ginger-Date Cookies 1/2 cup rice flour 1/2 cup flour of choice (garfava, quinoa, millet, etc.) 3/4 cup sugar 1/2 cup chopped dates 2 Tablespoons oil 2 Tablespoons hot water 1 teaspoon ginger powder 1/2 teaspoon baking soda 1.) Mix it all up in a bowl. 2.) Scoop teaspoon sized chunks of the batter, gently roll into little balls. 3.) Place the balls on a lightly greased nonstick baking tray, press down a little (before baking, sprinkle extra ginger on top, if you want them extra spicy!). 4.) Bake at 390°F (200° C) for 13-15 min.
