A delicious earthy stew that can be served alone, or as a hearty sauce.

1 stalk of leek, including greens (chopped)

1/2 med-large onion (finely chopped)

1 carrot (finely chopped)

4 med. red tomatoes (chopped into large pieces)

4-6 med/large white mushrooms

1/2 cup frozen spinach

1/2 cup frozen peas

2 cups water

1/4 cup olive oil

1/4 cup soy milk

2 tablespoons soy sauce or Bragg's Aminos

1 Tablespoon garlic powder

2 teaspoons tarragon

1 teaspoon basil

1 teaspoon chili powder

1 teaspoon sesame seed

1/2 teaspoon cinnamon powder

1/2 teaspoon ginger powder

pinch or two of sugar

parsley, to taste

Throw it all in a big pot, cover (allow a little ventilation). Simmer on
