Broccoli in Red Pepper Sauce

 

head broccoli

1/4 c. soy margarine

1/2 c. red pepper, chopped

1/2 c. onion, diced

sea salt to taste

 

1. Clean broccoli, cut off florets and steam them about seven minutes.

2. In a saucepan, melt soy margarine and add red peppers and diced onions.

Sauté until onions are tender.

3. Pour the sautéed vegetables over the broccoli florets. Sprinkle with salt

to taste. Toss lightly to coat broccoli and serve hot

 

Serves 5
