Tofu Loaf

Adapted from Tofu Cookery (adapted)

 

Mix together:

1 pound tofu, mashed

1/2 cup quinoa flakes

1/3 cup fresh parsley, chopped

1/4 cup onion, chopped (or 1 Tablespoon onion powder)

2 Tablespoons soy sauce

2 Tablespoons nutritional yeast (optional)

1/2 Tablespoon Dijon mustard

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

 

Preheat oven to 350. Oil a loaf pan with 2 Tablespoons oil. Press the tofu

mixture into the oiled loaf pan. Cover top generously with ketchup. Bake for 1

hour. Let cool about 10 minutes before removing from the pan. Garnish with

ketchup and parsley. Also good sliced and fried for sandwiches the next day.
