Potato Cheese

2 c. diced boiled potatoes

1 c. water

1/3 c. olive oil

1 Tbsp. chopped onions

1 Tbsp. chopped garlic

2 Tbsp. annatto seed

3 Tbsp. chopped red peppers

2 Tbsp. chopped fresh parsley

1/2 c. nutritional yeast flakes

2 tsp. sea salt

 

1. Place the annatto seed and olive oil in a small pot and heat until the color

is extracted. Strain out the seeds, saving the colored oil.

 

2. Place all other ingredients in a blender and blend until smooth. Stir in the

olive oil mixture with a spoon. Serve on pizza, macaroni, etc.

Hi Patti from WI here. Interesting recipe. But where do I find annatto seed?

I can buy it in some bulk sections in organic co-ops, but I usually

buy it at Filipino markets. Most Asian markets will carry it, as

will most Mexican/Salvadoran markets. It may be labelled achiote.
