Quick & Easy Thai Style Stir-Fry

 

 

4 tsp oil

450 g (1 lb) firm tofu, cut into cubes -OR- strips

500 g (18 oz) packet frozen Thai Style Stir-Fry Vegetables**

1/4 cup unsalted peanuts, finely chopped (optional)

4 tsp vegan Thai green curry paste

1 cup coconut milk

4 tsp lime juice

2 tsp GF soy sauce (-OR- Bragg's liquid aminos)

 

 

1. Heat oil in a wok or large fry pan. Add tofu and saute until lightly

browned.

 

2. Add frozen vegetables and stir fry for 3 minutes.

 

3. Stir in peanuts, curry paste, coconut milk, lime juice and soy sauce

and cook for 1-2 minutes.

 

4. Serve immediately with or without cooked rice.

 

 

Serves 4 with rice -OR- 2 without rice.

 

 

** Carrots, broccoli, green beans, baby corn, bamboo shoots.
