You all are so wonderful. I've been feeling all sorts of emotions and

I have found so much inspiration by reading your messages. My first

wheat-free day went mostly well. I did accidentally eat some

Twizzlers and Dots before realizing they probably contain gluten :(

It was an eye opener that I *must* read all labels again, like I did

when I first became vegan.

 

After work I picked up some quinoa-corn pasta and rice macaroni

(we're pasta addicts!) I also picked up brown rice flour, white rice

flour, tapioca starch, potato starch, and xanthum gum at a natural

foods store on the way home. I'm dying to make some gluten free

pizza! I bought smallish bags and in total spent only $3 or so on

them. I figure if I blow it, it won't be that big of a waste.

 

Besides the candy (big candy drawer at work), I ate my typical

smoothie for breakfast and salad for lunch (realizing my favorite

asian dressing has soy sauce and thus wheat in it, I had to improvise

my own!) My salad was excellent! It was romaine, spinach, cabbage,

carrots, peas, sesame seeds, sunflower seeds, and garbonzo beans (I

ditched the multigrain crackers) For dinner we had rice noodles with

marinara sauce, spinach and corn chips, I made a soy chocolate milk

shake for dessert. It was fun and delicious and I don't feel deprived

at all! In fact, I think I enjoyed my meals more and feel much better

than I usually do.

Wow, you are doing well to already know about the Twizzlers! It took me years

to discover that! I'm feeling great about you being off to such a good start.

:-)

 

We had Bar-b-que'd zucchini and portobello mushrooms for dinner with mashed

pototoes and salad, fresh pressed apple juice. I cut the zucchini into thin

strips, peel it, then marinade it (along with the mushrooms) for a few hours in

a mixture of organic balsamic vinegar and herbs. They taste great that way,

really brings out the sweetness of the zucchini, and portobello mushroom cap has

a wonderful flavour/texture.

 

There really are a lot of options for us. :-)
