Hi, this is Patti from WI,

I love swiss cheese, but I have to give it up. Anyone have any

really good recipes for homemade cheese that tastes good?

 

I would also like to give you a very good recipe for brown rice.

ALWAYS GREAT BROWN RICE

1 CUP BROWN RICE 3 CUPS WATER, 2t salt (opt)

In cool water in strainer with small holes, rinse rice and drain

well.

Put saucepan on medium heat, stirring constantly (for about 2 min)

or until rice looks dry.

Add 3 cups of water and salt. Bring to a boil, then lower heat

slightly; cover and simmer 40 minutes or until rice is soft.

A little more work, but definitely worth it.

BREAKFAST RICE PUDDING

2 CUPS COOKED BROWN RICE 1 t vanilla

1 1/2 cups vanilla rice or soy milk (your choice)

2 T maple syrup, 1/4 t cinnamon 3 T raisins

Combine all ingredients, bring to a slow simmer. Cook uncovered,

stirring occaisonally for about 20 minutes until thick. You can

also use dried fruit, nuts or coconut if you prefer.

It is delish!

Enjoy and let me know how you like this. It is filling and will

keep you going all morning.

hi patti

non-dairy cheese will never taste the same as dairy cheese,

unfortunately! i'd strongly recommend you to take a complete cheese

break for at least a couple of months and then try some non-dairy

cheeses. othewise you'll be comparing, and the comparisons won't be

favourable.

i think it's partly the fattiness of dairy cheese that we crave (i know

i lost a lot of weight when i stopped eating dairy - and cheese was my

main dairy consumption).
