Since most apples are picked unripened. they are far more acid-forming than what appears on the charts. But this is an artifact of poor food management, it has nothing to do with the apples per se. I eat apples at times, but I take considerable care in choosing them, one at a time. By taste I'd say they are sub-acid. And for me they digest fine with either bananas or oranges, but not both. By taste I'd say strawberries - maybe all berries - are in the middle - kinda acid and sub-acid.
