Nama Shoyu

I'm having a problem finding Nama Shoyu in the area. Does anyone know

of anything else that I could use that has a similar taste? I'm part

Japanese and have grown up putting soy sauce on EVERYTHING and I need

my shoyu fix!

Hi Jenn

 

As far as I understand it, 'nama shoyu' (the 'nama' means 'raw') is

not actually raw, as, however 'natural' the process of manufacture

is, it is nevertheless made from cooked soya beans. The

manufacturers call it 'nama', because, unlike most shoyus, it is not

pasteurised.

 

I keep seeing it in 'raw' recipes, and that's fine as long as everyone

realises it's not raw, because it's made from cooked food just as

veg. stock is made from cooked veg.

 

I'd be very happy to be corrected though, or to hear of a shoyu that

is not made from cooked soya beans, as I too like the taste of soy

sauce!
