If indeed Gabriel Cousins made such a statement, then Gabriel Cousins'

statement is incorrect. From the USDA nutrient database, release 17, a

selection of lettuces uniformly contain 95%-96% water, by mass. (In other

words, 95-96 gm water per 100 gm lettuce. By " uniformly contain " , I mean

that there is virtually no variance among the different lettuce varieties

listed.)

 

I would point out that most teachers in the RF world are no more informed

about the ACTUAL nutrient content of foods than are nutrition teachers who

wear any other moniker. In my experience, most have literally never even

looked at a primary nutrient database, much less attempted to comprehend it.

In other words, most are teaching from a base of, shall I say, missing

information.

Fruits are indeed high in water content, but most leafy greens--though very

nutritious--are not, according to Gabriel Cousens' book Conscious Eating.

Green leaves are essential in a healthful, lifelong human diet. Nuts and

seeds are not. In fact nuts and seeds bring in large quantities of dry

content containing excessive fats and indigestible fiber, a mixture that

slows our digestive system considerably, dehydrates us, and reduces our

energy and vitality, particularly when consumed with any frequency.
