From the USDA nutrient database, release 17, a selection of lettuces uniformly contain 95%-96% water, by mass. (In other words, 95-96 gm water per 100 gm lettuce. By " uniformly contain " , I mean that there is virtually no variance among the different lettuce varieties listed.) I would point out that most teachers in the RF world are no more informed about the ACTUAL nutrient content of foods than are nutrition teachers who wear any other moniker. In my experience, most have literally never even looked at a primary nutrient database, much less attempted to comprehend it.
