Guest guest Posted February 24, 2009 Report Share Posted February 24, 2009 I'm not going to give you guys the teaspoon by teaspoon measurements, since most things I make don't need that and I'm assuming everyone can either make the following or look it up online. Make your favorite mashed potatoes, on the thick side rather than runny, and mound it up in the middle of a baking sheet. Remember the movie Close Encounters of the Third Kind when Neely sculpts a mountain out of mashed potatoes at the dinner table? That's what you're going for. Hollow out the center. I like brushing the volcano with melted butter for added color and flavor. Fill the center of the volcano with shredded cheese or a nice vegetarian gravy. Sprinkle some cheese on the sides of your volcano. Make meatless balls out of TVP and arrange the boulders around your volcano. Heat in the oven till the cheese is bubbly. At this point, I usually toss some cooked green peas and carrots around the volcano, and have used cooked broccoli florets as trees. I used to make these individually for the boys when they were young, and put their preferred vegetables around the volcano. They never knew that the meatballs were actually made from TVP which I had seasoned with pepper, diced sweet peppers, onions and a mixture of herbs. Since TVP can tend to be dry, I'd " fry " them in a small bit of melted butter or a mixture of butter and oil. It's a silly thing, but the kids always ate it.
